I was very impressed the chef's gave up the recipe. Matador Chili ... mmmm ... it's the same local deli place that makes the Reuben soup I'm so crazy about.
Toski Sands Matador Chili
2 celery stalks, 2 leeks, 2 5errano peppers & garlic cloves: Finely chop & saute in olive oil, in a soup kettle.
1/2 cup Spanish White Wine: After vegetables have become translucent, add wine and cook until reduced in half.
Add the following ingredients and simmer until mussels have opened and Favor has developed through out the chili:
28 oz can San Marzano Diced Tomatoes
28 oz can San Mariano Tomato Puree
32 oz bottle Clamato Juice
2-15 oz can Prcgresso Cannelloni beans
1 chipotle pepper in adobe sauce, chopped
1 fennel, chopped
2 roasted red Peppers, chopped
8 oz smoked chorizo, diced
1 cup freshly chopped Parsley
2 bay leaves
salt & fresh ground pepper to taste.
Once chili has started to simmer, add 2 Ibs mussels.
This was delicious!
