I'm the one who does most of the bottling. Leaving about an inch and an half. It's the same in all batches.

but only two batches have gone insane.

We use different kinds of yeasts, it's different every time. The IPA had a yeast we have only used once. We will not order that kit again. The specific gravity seemed fine when we bottled but it still might have been an active yeast.

The Honey Porter... not sure what yeast it used. I'm trying to do forensics on it now.
