I have one student currently who takes notes with a stylus on a tablet. It's silent, and works well for biochemistry (or pretty much any topic).

I have no problem with it. Her computer is not connected to the internet (I asked her to look something up once).

Also, I tried taking notes on my palm pilot at seminars a few times (probably around 1998). It was not ultra-satisfying. However, I do like the idea of a digital archive of notes.
