We call it manicotti here and it's easy if you buy fresh shells and roll them yourself. I make manicotta every couple of months, a lot of work.

With baked ziti you don't stuff it. You cook the pasta until it's al dente or firm. You mix tomato sauce, mozzarella and ricotta with the pasta. Put it in a glass pan and spread it out even. Add some parmesan cheese on top and bake in the oven.
Kind of like lasagna.
