I think people avoid putting the hours on the home page because it's easier to change should the need arise

Like if they are closed for certain holidays or something. Also, IMO, it would be a mistake to put the hours on the home page because that's a buzzkill thing to find out that you missed their hours. If the home page is more enticing, it encourages them to wait until next time.
