Gallon sized Ziploc. Put a couple tablespoons of oil, your seasoning, the potatoes. Close the bag and shake it up.

you'll probably have to massage them as well to make sure they're all covered.

But absent a brush or something like a Wolfgang Puck's spray olive oil...this is what i would do.
