Bah! Simply because I prefer the tangy zip of Miracle Whip does not mean I'm a culinary imbecile!




1 tbs egg yolk
1.5 tsp fresh-squeezed lemon juice
1 tps white wine vinegar
1/4 tsp mustard (preferably Dijon, but sweet-hot works just as well)
About half a tsp salt (but more or less to taste)
3/4 cup light olive oil
Optional: 0.5 tsp freshly cut dill

Whisk together the egg yolk, lemon juice, vinegar, mustard, and salt in medium until fully blended (about 30 seconds to a minute).

Add the first 1/4 cup of olive oil to the mix, whisking constantly, in very small portions -- even as little as a few drops at time -- until the mixture is stabilized. Then gradually add the remainder 1/2 cup oil in a series of thin drizzles, still whisking constantly. When mayo is thick and can be whisked into peaks, cover and chill.
