supply and demand actually takes care of that pretty quickly.

grains are something that it's pretty easy to build a stockpile of - grow too much wheat and you can barely give it away and people are screaming for oats, so you grow oats.

also, there's the necessity of crop rotation. We don't grow corn so I don't have a lot of experience with it, but with most cereal grains you can grow them maximum two times in a row on the same piece of land before disease starts becoming a problem.
