I suspect the lack of food is hitting him hard.

The producers have not focused on the food as an issue because there is so much gameplay available to fill each episode. But they have all been losing weight, so you know they aren't eating tremendously well. Nearly every reward challenge has some component that is food and they are all desperate for those meals.
I don't know why it seems to be hitting him harder than the others, but he looks like he's hit that mental wall that starving people get to.
