It seems that the saute pans are able to withstand more heat than the skillets (450 as opposed to 340).

Most of the heat variances I've seen relate to handle material on other than cast iron pans. -- nm

Not really, I've just heard people rave about cooking in them - they can be thrown into the oven, etc.

Yes, you never wash it. You just wipe it down with a paper towel when it's cool. Washing it bad for a cast iron pan.

We wash with just water and everything comes off. Then you dry on low heat and add a tablespoon of oil to re-coat -- nm

You're right, you can and it's not difficult. I haven't yet. I've got some wonderful flavors coming out of it right now. Things taste so great.
