sure. i keep a peeled ginger root in the freezer. i just pull it out and use my fine hand grater to add it to things. keeps perfectly and it's

that's great, and keeping it in the freezer is great for this, because it doesn't get soft like it does in the fridge if you don't use it quickly. -- nm
