so - here's the deal - I'm making chicken & shrimp gumbo - with rice - but I forgot some guests are vegetarians - should I try to make something vegan

to go with the rice - and if so - what - or just trust that the dish they'll bring to pass will be enough with everything everyone else is bringing to be satisfactory?
