I bought a carrot cake mix and plan to try making cookies, using applesauce in place of the oil.

my wife has done that with apple sauce before, can barelt tell the difference and so much healthier -- nm

We have subbed applesauce for oil in pancakes to muffins with little ill effect. Also use wheat or flax flour subs as well -- nm
