flower question - what's everyone's favorite perennials?

I got 3 of the 4 ft by 4 ft raised beds that were linked here from Home Depot and can't decide what to plant for a "cutting garden" ... the back yard of oregano is finally getting the boot - YAY

I don't really think of perennials for cutting - and do they do okay in your climate? Here I'd probably consider things like lilies.
