Most of the time it's overcooked, like shrimp. It comes out rubbery and tasteless. When it's cooked

correctly, the meat just about melts in your mouth and has salty delicate flavor. The best seafood I've ever eaten was at a hole in the wall place in Port Canaveral in Florida. It was basically a shack next to a big cannery (omg, it stank!) where the fishing boats came in and unloaded. I've had awful lobster in some pretty high class places, like Mccormick & Schmick's in Seattle. I can't believe the way that chefs totally ruin stuff that is the simplest to cook.
