what else do they have going for them, in the old days produce couldn't be trucked that far so potatoes were one of the few things that traveled

potaotoes grow well enough on marginal land, in fact I'd say they do better in depleted soil, require little water, so you plant and in a couple months plow them all up.

its so easy even an idahoan can do it
