Some apps can't be shut down permanently or disabled. The best avenue is to get an App Killer. I use

The only other option is to root your phone (something that can damage it if done incorrectly).
I unreservedly recommended the Incredible. With the update to Android 2.2, though, HTC added lots of apps that cannot be disabled. Stocks, Skype, Amazon MP3.
So I now have aspects of my phone that are irritating where before the update I did not.
