I would generally agree with this. There's a place in Chicago where the owners are from New York and they believe that the thing that distinguishes

the New York bagels is actually the water. There's not really a difference in the recipes in any other respect, so the only real variable is the water. I can't remember whether they import New York tap water or if they created a filter system that mimics New York water, but they go to those lengths to recreate it. And the bagels are good.
