Pour some white wine and chicken or vegetable stock over the top, then slice up a couple of potatos and apples* and pile them up around the roast.

*cooking apples, like granny smiths, winesaps, something with a strong flavor that holds up.
Sprinkle a bit of sea salt and pepper over the potatos/apples and let them roast until browned. When the loin is done, pull it out and tent some foil over it to let it rest. Spoon your apple/potato mix into a bowl and keep it warm. Then pour all your pan drippings into a small pot, add another cup of wine bring it to a boil and let it reduce by half. Instant sauce. :)
