When you drop it in, that oil's gonna bubble up like crazy. I'd say the pot needs to be deep enough that the oil shouldn't come up more

You need enough oil to just cover the onion - but the pot should be twice that deep. This is one reason I don't deep fry anything - too much oil. -- nm
