I watched an Italian chef make some the other day on tv, she used finely chopped onions, garlic, FRESH breadcrumbs, 1/2 cup of parm, an egg and a cup

of milk. You work it all together very lightly, don't overhandle the mix. Then you hand roll walnut size, or tennis ball size balls and totally brown them on all sides in a skillet with a little olive oil. You want to make a crust so they don't fall apart in the sauce. They end up with a steak like crust on the outside and fluffy and juicy on the inside.
