Those kind of olives you don't eat by themselves, they are flavor elements (5th elements sorta) to compliment/complete a complex entre' IE:

there's this french/italian dish called Saffron Chicken where you bake it in a dutch oven with rice and those olives add a counter balance to the rice infused with the chicken juices and fat.
