LIR: So many great ways to eat pig. Haven't had prosciutto in a while, so I'm feelin that as my answer.

you should try Jam�n ib�rico and Jam�n serrano - so much better than prosciutto (although (Speck) smoked prosciutto is pretty good) -- nm

I read a story sometime last year on how iberico is supposed to now be available in markets in the US, whereas it wasn't before.

Well, there is a misconception that prosciutto is "raw," but both it an capicola are in fact dry cured.
