It's like those molten lava cakes. but homemade. (i halved it for two servings.
"Warm chocolate cake in under 15 minutes....
Preheat oven to 450 degrees
8Tbs of Smart Balance or ICBINB
2 tsp. of whole wheat or soy flour
4 oz. chocolate chips (Andie Note - i used a Lindt 50% cocoa bar, chopped)
2 large eggs
2 large egg yolks
1/4 c. splenda
While oven is heating spray 4 small ramekins with cooking spray microwave the butter, be sure to place something over the top, butter pops.
While butter is melting Beat together the eggs, yolk and sugar until creamy yellow.
Take the butter out of the microwave and add the chocolate. Stir until the chips have melted. Pour chocolate into the egg mixture and stir to combine. Add the flour and stir. Pour into prepared dishes. I put the ramekins on a cookie sheet. Bake 6-8 minutes until the sides have set but the middle is still soft. Invert on plate, wait 10 seconds, unmold by lifting up one corner of the mold. (Andie note - i baked for at least 8 minutes. Centre was still gooey, as it should be.)
I love the oozing of the chocolate. I make mine in ramekins so I don't have to unmold. We eat them right out of the dishes. Would be nice with a little whip cream."
Andie note - served with whipped cream and strawberries
