Tour the Mint, Molly Brown House, drive to Golden for the Coors tour & Buffalo Bill Museum.

I'd recommend the Colorado History Musuem, too, but it looks like they're closed temporarily (they're moving). I lived in the area when I was a kid and remember the History Museum was pretty cool. Lots of Old West stuff and a big exhibit of Colorado minerals.
If you don't mind a drive, Colorado Springs is worth a visit for the Air Force Academy, Garden of the Gods (rock formations) and the Olympic training center.
Even if you don't ski, a drive into the mountains would be fun. Find a ski lodge and sit in front of the fire with a hot toddy.
